Spinach w/Garlic Vinaigrette
serves 4
Ingredients
- 1-1/2 T olive oil
- 1 T white wine vinegar
- 1/2 T Dijon mustard
- 2 cl garlic, minced
- 6 C baby spinach, washed
- 1/4 C red onion, very thin slice
Instructions
- Whisk together the olive oil, vinegar, and mustard, then mix in the garlic. Season to taste.
- Toss the spinach and red onions with the dressing.
- Plate, and serve chilled.
